
Water is the invisible infrastructure behind all beverages. We hardly ever see it, as we prefer to look at the colour of a wine, the foam on a beer, the design of a label, the transparency of a bottle, or the taste of a soft drink. And yet it is there: an ingredient, a means of production, an agricultural resource, a processing fluid, and a tangible measure of the climate crisis. Within every sip lies water transformed by culture, energy, technology, and industrial and artisanal know-how. We are made up of about 60% water, and we survive by drinking water. And yet, we continue to behave as if there were a clear boundary between ourselves and natural cycles. This is the great misconception of the Anthropocene: the species that most alters Earth’s systems still portrays itself as if it were external to them. But it is worth remembering: drinking is never a neutral act.
Every drink is a point of convergence between nutrition and culture, between agricultural supply chains and industrial infrastructure, between individual pleasure and collective responsibility. Every sip does not end when we swallow, for it continues within the body, carrying with it the quality of the supply chains from which it originates. When we drink, the liquid enters the body and is transformed into energy, movement, thought and waste. Life, in fact, does not proceed in a straight line: it absorbs, transforms and returns, physically making us what we consume and culturally what we choose to extract, produce, transport, bottle and waste.
Circularity, therefore, concerns us from within. That is why the circular economy cannot be reduced to the efficient management of waste. It is, first and foremost, a diet. Not in the restrictive sense in which we often use this word, but in its original meaning of diaita: a way of life and a daily practice. A circular society is not simply one that recycles more after having consumed too much: it is one that metabolises better, reduces what is unnecessary, makes the most of what remains and recognises its own limits.
The drink & beverage sector is a perfect barometer of this complexity. There's more to it than just the product and its packaging: it encompasses a culture of taste, rituals, social habits and regional heritage. It is also a market that taps into desires, shapes consumption patterns and associates drinks with promises of health, wellbeing, energy and performance, which are not always backed by solid evidence.
In the wine sector, climate change is transforming cultivation areas and altering sugar levels, acidity, alcohol content and the identity of the terroirs. In the dairy sector, sustainability hinges on methane emissions from livestock farming, animal feed, animal welfare and the transformation of production and consumption models. In the beer sector, the transition concerns barley and hops but also process heat, regenerative agriculture and logistics. In the world of packaging, circularity is about smart compromises, not miracle solutions: the material matters, but so do weight, design, collection, the potential for reuse, and the ability of labels to provide accessible information, traceability and correct end-of-life instructions. Finally, the practice of refilling reminds us of a simple truth: the most sustainable container is often the one that does not need to be produced from scratch.
The new issue of Renewable Matter explores these tensions: supply chains seeking to decarbonise without compromising on quality; agricultural regions forced to adapt to climate change; companies rethinking materials and distribution systems; and businesses transforming by-products into ingredients, fibres, energy and new materials. However, it also examines what we choose to drink, the promises associated with new consumption patterns, and the relationship between health, pleasure and the possibility of reviving tastes and practices marginalised by standardisation.
Together, these articles demonstrate that transforming the beverage sector means acting upon the relationships between the biosphere, the economy and society. Every sip is a system, and making it circular means learning to recognise and redesign its connections.
